Carrot Pudding
"This carrot pudding was a favourite of my mother's, she made it every year in place of the original plum pudding, a fav of our family for years."

Carrot Pudding
INGREDIENTS
1 cup suet
1 cup raw grated carrots
1 cup raisins
1 egg
1 tsp salt
1 tsp soda
1tbsp vanilla
1/2 cup flour
1/2 tsp each, cinnamon, cloves and nutmeg
2 tbsps sour milk, or enough to make a drop batter
1 cup brown sugar
1 cup grated raw potato
1 cup currants
Fill pan 2/3 full and steam for 2 hours
Sauce for Carrot Pudding:
1/4 cup sugar
1 cup boiling water
1 tsp. vanilla'
2 Tbsps butter
DIRECTIONS
Combine pudding ingredients, fill pan 2/3 full, and steam for 2 hours.
Combine sauce ingredients, cook until thick and clear.
