Carrot Pudding

"This carrot pudding was a favourite of my mother's, she made it every year in place of the original plum pudding, a fav of our family for years."

Carrot Pudding

INGREDIENTS

  • 1 cup suet

  • 1 cup raw grated carrots

  • 1 cup raisins

  • 1 egg

  • 1 tsp salt

  • 1 tsp soda

  • 1tbsp vanilla

  • 1/2 cup flour

  • 1/2 tsp each, cinnamon, cloves and nutmeg

  • 2 tbsps sour milk, or enough to make a drop batter

  • 1 cup brown sugar

  • 1 cup grated raw potato

  • 1 cup currants

  • Fill pan 2/3 full and steam for  2 hours


Sauce for Carrot Pudding:

  • 1/4 cup sugar

  • 1 cup boiling water

  • 1 tsp. vanilla'

  • 2 Tbsps butter


DIRECTIONS

  1. Combine pudding ingredients, fill pan 2/3 full, and steam for 2 hours.

  2. Combine sauce ingredients, cook until thick and clear.
